Traulsen's exclusive VPS
®
(Venturi Plenum System) prep tables represent the
industry standard for performance. Their unique air-flow pattern does away with
the messy, labor intensive, cold wall design in favor of directing cold air under
and around the food pans. This is then coupled with a gentle blanket of air which
settles on top of the pans, thoroughly insulating them from the room
ambient, without drying. The end result of this is NSF Standard 7 performance
for six, rather than just four hours, with the top open!
Your expensive ingredients, both those with high fat and high water contents, are
held equally well, at even temperatures, without freezing, significantly reducing
food waste. Product can even be stored safely in the rail overnight by simply
covering them with plastic wrap. Imagine all the potential cost saving benefits
possible by virtue of six-hours of safe food pan storage, in addition to no water or
frost build-up to clean-up everyday! Not only is your food held safely, but these
models will begin to pay for themselves from the very first day!
Pans are placed in full view, ergonomically sloped for easy operator access, and
also allow for maximum storage capacity. These standard 12" front to back raised
rail models are ideal for use producing pizzas, gyros, sandwiches, salads, or
anything else requiring cold ingredients/condiments to be held in open top pans
for fast preparation.
